I chose to utilize this blog post as a guide to making perfet marinated baked chicken thighs. This recipe is a formula, offering you opportunity to play with your culinary imagination for a marinade. So simple to bake chicken thighs, follow these steps and your chicken will be moist and flavorful every time. I always try to use humanely harvested chicken, which is always incredibly tasty. 4 Humanely Harvested Chicken Thighs
1 wedge Lemon
Salt & Pepper
5 ounces gluten free BBQ Sauce or thick Marinade
Extra Virgin Olive Oil
Pre-heat oven to 425 degrees and lightly olive oil the bottom of a baking pan to be used for the chicken. I prefer a pan with about a two inch side.
Prepare Chicken: Clean chicken thighs, be sure to run clean chicken between the skin and the flesh, remove fat & trim the skin. Pat dry and place in a large bowl or plate. Squeeze a few drops of lemon on the chicken; add a pinch of salt and pepper. Next add the marinade (click here for Kitchen Wisdom Gluten Free Recipe for Apricot & Garlic BBQ Sauce & Marinade pictured below).
Marinate the Chicken: Cover chicken with about 3 ounces of marinade of your choice (click here for Apricot & Garlic BBQ Sauce & Marinade recipe). Be sure to place some marinade between the skin and flesh, lift the skin and place a bit of marinade on the flesh with your spoon, then rest skin back in place. Set aside for a few minutes and allow the flavors to marry.
Place chicken thighs in the prepared baking pan and add the remaining 2 ounces of marinade or BBQ sauce atop the chicken and then smooth it.
Place chicken in the oven. Bake for 10 minutes.
Baste. Bake an additional 10 minutes.
Baste again. Bake an additional 10 minutes. Remove from oven. Baste again. Remove to serving plate. Cover and allow to rest a few minutes before serving.
