Kitchen Wisdom Gluten Free Marinated Mozzarella is so easy and delicious, you will wonder why you haven’t been making your own marinade all along. Sometimes called Bocconcini, translated to “little bites”, little pieces of mozzarella are drained, placed in a bowl with olive oil and spices and served. These days, the majority of marinated products in the markets have a chemical laden stew of faux spices and heart dangerous oils, this recipe demonstrates how simple and healthful it is to make your own marinade. Serve as a wonderful appetizer in salads, on sandwiches and more!
8 ounces mini Mozzarella balls in water
1 clove finely crushed Garlic
2 teaspoons finely chopped Italian Flat Leaf Parsley
Crushed Red Pepper (to taste)
Finely chop the garlic & parsley, set aside.
Drain the mozzarella by removing it to a clean bowl with a slotted spoon.
Drizzle 1 tablespoon of Olive Oil over the cheese. Sprinkle: the garlic, 1 teaspoon of parsley and crushed red pepper. Gently turn to completely combine ingredients and coat the mozzarella. Drizzle the remaining olive oil over the mozzarella and top with remaining parsley. Serve immediately or allow the ingredients to marry leaving it in a covered bowl for 20 minutes or more. Toss to thoroughly coat mozzarella with marinade before use.
