“Breadcrumb” – Forget What You Know About Wheat(c)

The idea of breadcrumb doesn’t seem like it should call for a lot of attention – but IT DOES!  To live GF one must learn the art of ‘Breadcrumb’.  This is the part of gluten free living that is essential!   In my opinion, freshly prepared GF ‘Breadcrumb’ combinations have the ability to out flavor and out perform traditional gluten rich breadcrumb and coatings.

One day I was at a friend’s home for a wine and cheese sort of afternoon.  She had kindly purchased rice crackers as chips for me to eat with dip she had made.  I enjoyed the crackers, found them tasty and suddenly had a revelation that ground in the food processor the crackers could be used for ‘breadcrumb’!  What an epiphany!  (I’m kind of embarrassed it took so long to think of it.)  Consider for a moment, this sort of breadcrumb is but one American interpretation of Old World Southern Italian recipes.

Gluten Free Rice Crackers:

Gluten Free Rice Crackers come in various flavors, such as sesame.  Sesame is my favorite for ‘breadcrumb’ as it imparts a harmonizing mellow flavor and beckons your guests to ask for the identiy of the delicious and hidden flavor.  Ground to medium fine texture in my food processor, I use these crackers for breadcrumbs all of the time.

A Note about the Addition of Italian Hard Grating Cheese in Breadcrumb Mixtures: 

I prefer Locatelli which is a sheep’s milk cheese.  It is the grating cheese I was raised with and I am a creature of habit in many ways.  Use the grating cheese which you find most appealing.  I encourage you to mix and match your own ‘bread’crumb mixture!

Locatelli Brand Pecorino Romano Italian Hard Cheese:

Locatelli is a brand name of cheese and Pecorino Romano is a variety of hard sharp cheese.  It is made of Sheep’s milk and aged 9 months or longer.  It originates in the Lazio region of Italy and boasts an enormously long history of making this cheese.
