Potatoes and Sausage are a wonderful example of Southern Italian Soul Food. A simple meal – gratifying and distinctive. This sumptuously aromatic dish of Potatoes and Sausage is easy to make; the stove does most of the work. Delicious with a salad for lunch, dinner, even for camping!
1 pound Potatoes (Russet or Red or Yukon or a combination)
½ pound lean gluten free Sweet or Hot Italian Sausage
¾ cup chopped Onion
Salt & Pepper to taste
(optional) Crushed Red Pepper to taste
Chop the onion and set aside. Quarter the potatoes, slice the quarters in half and set aside. Prep the Sausage: Clean and remove the casing by slicing a vertical cut in the sausage from top to bottom. Discard the casing, separate the meat and place in an ample sized sauté pan to cook for 8 minutes on medium low.
If the meat is lean you may need to add a dash of olive oil, if it is fatty, remove the sausage and drain the fat and then add the onion. Cook for an additional 5 minutes, add the potatoes and salt and pepper to taste. Toss all of the ingredients to completely combine. Place a lid on the pan in a slightly ajar position, and cook for 30 minutes, toss every ten minutes during cooking time.
Camping Note: Create individual foil packets, divide the potatoes and sausage. Place in ziplock bags or container. Freeze and then warm up over a fire pit while camping.
